Our ducks are raised the natural,
old fashioned way on 100% organic certified pasture* without hormones,
antibiotics or other additives. They get lots of sunshine, water to
play in and plenty of room to roam on our 210-acre ranch on the
spectacular Sonoma coast. Their growth is not hurried and their lives
are filled with plenty of sunshine, water to play in and bugs to hunt.
They are introduced to new areas of pasture every few days so they
don't get bored and are able to eat a variety of grasses and weeds,
along with a locally produced certified organic feed containing a 16%
protein mix of grain, minerals and vitamins. While rotational grazing
takes more time and work on our part, the difference in flavor between
a bird that has been freely grazing on open pasture and one that has
been barn-raised on grain with restricted exercise and limited to only
one type of feed is well worth the effort. Our ducks are 100% organic
certified up until the day they are harvested.
A favorite of pre-Columbian native
Americans
Native to Mexico and Central and
South America, the Muscovy is a very old breed and was already
domesticated by Native Americans in the New World by the time Columbus
arrived. They are the only domesticated duck not derived from Mallard
stock and exhibit a number of unique physical and behavioral
characteristics. They have big, strong claws designed to grasp, like to
perch in trees and are quite good flyers. They are exceptionally
tranquil and practically mute, cooing, rather than quacking.
A
healthful alternative to Pekin duck
Muscovies have the least fat of any
domesticated duck (30% less fat than a
Pekin) and because of this, their meat is not greasy. Their unique
flavor and lower fat content have made them exceptionally popular among
Europe's chefs and health conscious consumers.
Muscovies
have:
- The least fat of any domesticated duck.
- 50% more breast meat and 50% less fat in the skin than other
breeds (including the Pekin).
- Breast meat that is 99% lean.
- A slower, more naturally-paced growth pattern and are not ready
for
market until they are 70– 85 days old compared to the faster grown
Pekin, which is harvested at 49 days.
